Tomatillo Salsa

This past weekend, I picked a bunch of tomatillos and husked them. Tomatillos are full of minerals, vitamins and proteins, which are very beneficial for the skin and body.  What’s the best way to use tomatillos you may ask. Well, I love to make a green salsa with them.  It goes perfect with tortilla chips this time of year.  Here is my recipe:

Tomatillo Salsa

1 pound organic tomatillos (husked)

¼-½ cup chopped yellow onion

1 jalapeno or serrano chile pepper chopped (depending on how spicy you want it)

1 clove of minced garlic

Chopped cilantro (to taste)

½ tsp cumin (ground)

2 cups water

Salt and Pepper (to taste)

Place all ingredients in a saucepan and boil for about 10 minutes. Tomatillos should be soft before removing the mixture from the heat.  Once it reaches boiling point, reduce the heat and puree in a blender until smooth.

Serve with Chips.
